So here’s the thing: When it comes to food (breakfast food in particular) I am a total creature of habit.
I’ll go through phases that generally last a few weeks where I gravitate towards the same thing, and although I know I should be switching things up – sometimes you just gotta roll with the ‘hey, if it ain’t broke’ approach… You know?
What le body wants, le body gets!
Lately I have found that smoothies are the best option, partly because it has been hot as HELL (no complaints here!) but also because I find that my gut responds best to something nice and easy to digest first thing. It also means I can cram in all the goods (think collagen, probiotics and my favourite digestive aids) to help with the whole healing process and boost my gut health to the maximum, all before I have even left the house. Not bad going, right?
With that, allow me to present to you my latest breakfast craving – a mega refreshing smoothie bowl to cool you down over the coming months that packs in a whole lot of the veggies: I’m talking cauliflower, courgette and spinach all in one blend – and let me tell you that it really does not suck! The exact opposite, in fact. The cauliflower acts as a creamy base whilst the greens are virtually tasteless when you mix it up with that little hit of sweet banana (a prebiotic rich fruit, meaning it helps the good guys grow in your gut), punchy ginger and warming cinnamon.
And the final touch? It’s gotta be that spoonful of coconut butter to really amp up the creaminess and make every spoonful one to truly relish. If you haven’t tried coconut butter yet, then I strongly urge you to do so! It transforms smoothies and hot drinks in to the frothiest creamiest delights whilst boosting the healthy fats to warn off the hanger bitch for that little bit longer.
You may have seen on the ol’ Instagram that I’ve been riding the collagen band wagon religiously for a few weeks now – and I gotta tell you, I’m feeling it. In case you’re yet to discover this magic ingredient, collagen is a highly digestible protein that helps to increase bone density, promote stronger hair and nails and also nurture the gut. So it was pretty much a no brainer for me to try out, ’cause anything to speed up the health restoring process! So whilst it takes time for the benefits to kick in and I’m not here saying it’s already changed my life, but I will say that my nails, which were left looking sorrowful and brittle after the harsh winter climate, are now well on their way back to being mani-worthy, and my skin is looking pretty damn glowy if I do say so myself! What’s more is that a lot of protein powders cause aggro with my sensitive stomach, so the fact that collagen is so easily absorbable makes it my new go to for boosting the horse power of my smoothies, as well as hot drinks and soups. You can do so much with it! I picked up mine from Whole Foods when I was last in London and it’s by a brand called Planet Paleo… Highly recommend!
I’ll also go in with the probiotic powder to lap up those good bacteria benefits – and the one that I use by Arbonne actually has digestive enzymes in too which is real helpful, considering I’m sort of lacking in that department too. Note how I make a point of making this in to a smoothie BOWL and not just as a smoothie, as it makes me ‘chew’ it as opposed to gulp it down all in one go. Sounds a little cray to chew a smoothie, I know! But when we chew, we stimulate the enzymes in our mouth to kick off the digestive process – so if you want to avoid the infamous ‘smoothie bloat’ – then be sure to slow down and enjoy this one in your own time!
Oh oh oh – one thing I will say is that for the veggies – you want to make sure you precook them BEFORE freezing. This will make them waaaay easier to digest! All you I do is steam a big batch of chopped veg (courgette, cauliflower and broccoli are best) until just tender, before allowing them to cool and storing in freezer bags. It sounds a little faffy, but it’s so worth just taking that little time out to do it; that way you know you’re totally covered for your smoothies for the next week!
I sweeten things up with maca powder (derived from the root which helps to balance hormones), but if you don’t have any – try raw honey or a hint of maple syrup. Or if you’re already sweet enough, then just go with out! Whatever makes you feel good, my friend.
- 1 large handful spinach
- 1 cup cauliflower, presteamed and frozen
- 1 cup courgette, presteamed and frozen
- ¼ frozen banana (add ½ if you like it sweeter)
- 1 tsp coconut butter
- 100ml filtered water or almond milk
- ½ tsp cinnamon
- ¼ tsp turmeric
- 1 tbsp chopped mint leaves
- 1 knob of ginger, chopped
- 1 tbsp lemon juice
- 1 tbsp chia seeds
- OPTIONAL ADD INS:
- 1 scoop collagen
- 1 scoop plain vegan protein powder
- 1 sachet or capsule of probiotic powder
- 1 tsp maca
- ½ tsp raw honey, to sweeten up
- Simply place all the ingredients in to a high powered blender and whizz up until smooth, about 1 minute. You might need to add in a little more liquid to get it moving!
- Pour in to a bowl and top with whatever you want!
